Job Description

The Assistant Gelato Chef reports to the COO and is responsible for preparing food to be served, complying with all applicable sanitation, health and personal hygiene standards, and following established food production programs and procedures to assure that the highest quality food is provided on a daily basis. The Assistant Gelato Chef is responsible for appropriate use of facility supplies and equipment to minimize loss, waste, and fraud. The Assistant Gelato Chef is expected to perform FOH duties as needed.

Essential Functions

Prepares food served using established production procedures and systems
Determines amount and type of food, and supplies required using production systems
Ensures availability of supplies and food in adequate time for preparation
Sets Pasteurizer, Mixer, Spinners, Blast Freezer, and all other equipment; prepares, uses, dismantles, and cleans all equipment properly
Complies with established sanitation standards, personal hygiene and health standards
Follows established safety and infection control policies and procedures including body mechanics and ergonomics
Observes proper food preparation and handling techniques
Stores food properly and safely, marking the date and item
Detects and ensures disposition of spoiled or unattractive food, defective supplies/equipment and/or other unusual conditions
Reports necessary equipment repair and maintenance to supervisor
Correctly prepares all food served following standard recipes and special orders
Follows food production schedule so that excellence, quality, temperature, and appearance of food are preserved
Apportions food for serving
Maintains daily production records
Keeps work area neat and clean at all items; cleans and maintains equipment used in food preparation
Completes food quality checks before service
Participates in all training programs established by Coletta Gelato and OSHA guidelines
Coordinates production in support of internal catering activities
Prepares and complies any necessary productivity reports, evaluations, studies, etc.
Participates in continuing education opportunities for personal growth and development
Assist in problem-solving to improve the effectiveness and efficiency of Production
Receives shipments and deliveries
Operates as FOH staff, as assigned
Provides direct customer service via scooping and sales of product
Acts as cashier, opening, locking and securing store
Assist in other tasks as assigned

This position manages all interns or guests of the department and is responsible for their performance.

Work Environment

This position operates in a kitchen environment, housed with equipment such as a Pasteurizer, Blast Freezer, Gelato Spinner, Mixer, and Chef’s Knives. The employee is exposed to heat, cold, wet conditions, moving mechanical parts, noise, high and precarious places, toxic or caustic chemicals, and possible risk of electrical shock.

Physical Demands

The physical demands described here are representative of those that must be met by an employee to successfully perform the essential functions of this job. The employee is occasionally required to sit, stand, reach, lift, bend, kneel, stoop, and climb. The employee is frequently required to lift or move items weighing up to 50 pounds. The position requires manual dexterity, auditory and visual skills, and the ability to follow written and oral instructions and procedures.

Position Type / Expected Hours of Work

This is a full-time position. The employee’s schedule may alternate, as required to meet Production and other needs. Days and hours of work may include Monday through Sunday, 8:00am to 10:00pm. The employee will typically work 35-40 hours per week.


The employee may be asked to occasionally travel for internal catering events or other special events.

Required Education and Experience

Prior experience in a related food service position
Preferred Education and Experience

High school diploma or GED
Two to three years BOH experience
Pastry courses or experience
Work Authorization

The employee must be able to demonstrate work authorization or employment eligibility
