Using a former linen truck from a naval base, Casey worked with El Monte Catering in San Jose to customize a Neo-Neapolitan pizza making machine. The custom truck features an on board Marsal deck oven with a massive firebrick hearth and ceiling.

With temps nearing 700F+, the made-to-order, thin crust pies bake in just 4 minutes, with a crisp crust, ample char, and a chewy interior. Casey's Pizza, inspired by the old world pizzerias of the New York such as Pepe's, DiFara, and Lombardi's, is recognized as one of San Francisco's most unique and best kept secrets.
